Where's the fear Wednesday, and Blue Apron review!



I LOVE this. I can just imagine Paul spinning on his heel to look Festus in the eye, and with a steely stare, boldly proclaiming "I am not out of my mind".

Believers are often seen as weak for leaning on an invisible creator. Some say we simply are unwilling to face life because we trust that all things come from God with a purpose. We are seen as 'out of our minds'. Crippled, crazy, weak, and confused.

Paul didn't believe that, and he didn't fear their lack of faith. He knew God was with him, in him, and for him. He didn't care whether or not they believed him, he was going to speak the truth, and stand his ground.


Act 26: 24-29

24 And as he was saying these things in his defense, Festus said with a loud voice, “Paul, you are out of your mind; your great learning is driving you out of your mind.” 25 But Paul said, “I am not out of my mind, most excellent Festus, but I am speaking true and rational words. 26 For the king knows about these things, and to him I speak boldly. For I am persuaded that none of these things has escaped his notice, for this has not been done in a corner. 27 King Agrippa, do you believe the prophets? I know that you believe.” 28 And Agrippa said to Paul, “In a short time would you persuade me to be a Christian?”[b] 29 And Paul said, “Whether short or long, I would to God that not only you but also all who hear me this day might become such as I am—except for these chains.”

We got our first Blue Apron delivery!!!

Our first box had ingredients and recipes for:
  •  A: steak & roasted potatoes w/sauteed long beans
  •  B: mexican style chicken tortas w/tomato, avocado, and cucumber salad
  • C: crispy catfish w/ sicilian eggplant caponata. 

Everything was wrapped, sealed, labeled, and chilled. The box contained 2 huge ice packs, and was lined with an insulated foil sheet. Blue Apron, you did a great job!



We made the steak and potatoes last night. Sorry, we ate it so fast that we didn't get a picture! The sauteed long beans were by far the best part. We sauteed 4 whole garlic cloves (smashed) in olive oil for 1 minute, added cut, long green beans, diced tomatoes, and a small pile of thyme. It cooked for about 9 minutes, and then set aside to thicken. ~~~Oh my goodness~~~ They tasted like they had the sweetest, yummiest, most amazing glaze. Of course, there were no survivors. These will be a side dish made on the regular. The steaks were simple, 5oz, and seasoned with salt and pepper. Diced potatoes roasted for 22 mins in olive oil and your choice of seasoning. The entire dinner was light, but filling.

You know how we've talked about my loss of creativity in the kitchen. This may put me back on the right path.

I was stressed, as I was cooking steak, for a guy.... You know me and red meat. It's like asking a Kardashian to load the dishwasher. (lots of blank stares, and an adequate amount of crying). Luckily steak is a bit difficult to screw up, especially when he comes to your rescue and finishes that part of the dinner.... Thanks!!

Tonight we are making the catfish w/sicilian eggplant caponata. I have no idea what that is, and I'm really excited to try it!!!!

 WORK IT!

I'm sore from super workout, and tomorrow morning I have round 2 to survive.

The track is open so I'm getting my run on Friday!! Everyone around me is happy because I'm super weepy and emotional when I can't run.
